Gingerbread Muffins

Ingredients
· 2 eggs
· 1/4 cup vegetable oil
· 1/2 cup molasses
· 1/2 cup milk
· 1/4 cup cream
· 1/2 cup granulated sugar
· 1/4 cup packed brown sugar
· 1 1/2 cups unbleached all-purpose flour
· 1 teaspoon baking powder
· 1 teaspoon cinnamon
· 1 1/2 teaspoons dried ginger
· 1/2 teaspoon salt
Instructions
Preheat oven to 350°F. Grease muffin pan or use muffin papers.
Beat eggs, oil, molasses, sugar, milk, and cream in a large mixing bowl.
Combine dry ingredients in a bowl and add to wet ingredients, mixing until smooth.
Pour batter in prepared muffin pan and fill cups 2/3 full.
Bake for 20 minutes. Cool on wire rack.
